A different kind of cake 😉

Ingredients:

  • 270g semolina flour
  • 400ml coconut milk
  • 400ml water
  • 1tsp ground cardamom
  • 500g canned pineapple
  • 120g unsalted butter
  • 70g brown sugar
  • 4 eggs
  • sesame seeds for garnish

Preparation:

  • Preheat oven to 200 degrees celsius
  • Pour semolina into a heavy-bottomed pan and roast on medium-high heat. Don’t stop stirring. Give it some time. You want to brown it, not burn it.
  • Add coconut milk, water, and sugar, bring to boil.
  • Stir, let the mixture thicken. Just a few seconds.
  • Put the pan aside, add butter, cardamom, eggs, and pineapples. Stir in well.
  • Pour the mixture into a greased cake pan.
  • Sprinkle the top with sesame seeds. I use a lot, so it’s all covered. But it depends on your taste.
