A different kind of cake 😉
Ingredients:
- 270g semolina flour
- 400ml coconut milk
- 400ml water
- 1tsp ground cardamom
- 500g canned pineapple
- 120g unsalted butter
- 70g brown sugar
- 4 eggs
- sesame seeds for garnish
Preparation:
- Preheat oven to 200 degrees celsius
- Pour semolina into a heavy-bottomed pan and roast on medium-high heat. Don’t stop stirring. Give it some time. You want to brown it, not burn it.
- Add coconut milk, water, and sugar, bring to boil.
- Stir, let the mixture thicken. Just a few seconds.
- Put the pan aside, add butter, cardamom, eggs, and pineapples. Stir in well.
- Pour the mixture into a greased cake pan.
- Sprinkle the top with sesame seeds. I use a lot, so it’s all covered. But it depends on your taste.
