Such a strong coconut flavour and scent you’d feel like you’re in Asia

Ingredients:

  • 2 cups of Dinkel/Spelt flour (or whole wheat)
  • 3/4 cup unsweetened shredded coconut
  • 2 cups of coconut milk
  • 1/2 cup of coconut water (look for a 100% version, if not available, use milk only)
  • 2 eggs
  • 3 tbsp. coconut oil
  • 4 tsp. baking powder
  • salt

Preparation:

  • At first, divide the dry and moist ingredients into separate bowls.
    • In one bowl mix well the eggs, coconut milk, coconut water, coconut oil.
    • In a different bowl mix the flour, shredded coconut, baking powder, and salt.
  • Slowly incorporate the dry ingredients into the bowl with the wet ingredients, mixing continuously, until smooth stiff mixture is created.
  • Without any extra oil or butter, pour the mixture in batches into your pan. I personally use the electric crepe pan griddle, totally the most professional outcome for a good price.
  • Serve according to your taste.

As for me, I totally love the maple syrup and sour cream. My boyfriend loves to eat it with blueberries and cream. But actually there is no wrong idea. You can even prepare it with eggs and bacon!
