– apples, cinnamon and coffee… what a perfect morning ?
Ingredients for 2 serves:
- 1tbsp red curry paste
- 200g kale
- 250g chickpeas (dried)
- 60g cashew nuts
- 300ml coconut milk
- 55g
yasmine rice
Preparation:
- Heat oil and add the curry paste. Fry for about 3 minutes.
- Add chickpeas, kale and mix well.
- Pour in the coconut milk, bring to boil and let it simmer for 10 minutes.
- Add cooked rice.
- Garnish with cashew nuts and sprinkle with chopped kale stem (zero waste method).
